Recipes

This page is a sampling of some of my favorite recipes.  Some are my own creations, but some may be my variation of another person's recipe.  In that case, I will gladly share links and credits, accordingly.  All of them will be gluten-free, dairy-free and egg-free.  Some will have meat, others will be vegan. I hope you enjoy!




This morning I threw some yummy things together that I thought I'd share with you:
  • Cook one serving certified gluten-free organic oatmeal from Bob's Mill according to package.
  • Add: 1/4 cup organic canned pumpkin, 1 Tbsp slivered raw almonds, 1 Tbsp dried cherries, 1 Tbsp flaxseed oil, 1 tsp cinnamon, 5-10 drops hazelnut flavored Stevia.
I've been digging a few new blogs lately.  Here's a recipe for when you want a little chocolate without the guilt.  I changed this recipe from Chocolate Covered Katie's blog just slightly to adhere to my own food sensitivities.  She's got some great recipes!  Check it out!
  • Instead of spelt flour I used coconut flour, sifted.  I also used 1 tsp raw sugar instead of 2, and used 2 packets stevia.  It was a little dry so I added another teaspoon of coconut milk.  Finally, I love vanilla, so I used 1/2 tsp instead of a 1/4.  I sprayed a coffee mug and threw it in the microwave for one minute.  Ummmm, that Katie's a smart girl!  Chocolate fix cured!
Some friends have asked me to share salad recipes I've made for them.  Here's one that's great for fall/winter:
  • Spinach, Arugula, or other mixed green lettuce, saute broccoli with a little oil and garlic, cut up roasted butternut squash (I bake at least one a week by quartering it, cleaning out the seeds, brushing it with oil and baking it for an hour at 350 degrees...this I also scoop out for my toddler, use in soup, or slice up and throw in a salad, like here!) 6 or 7 raw walnuts, pecans or other nuts, goat cheese or you could use asiago or parmesan, and then mix (for one serving) 1 Tbsp flaxseed oil, 2 Tbsp balsamic vinegar, 1/2 tsp dijon mustard (my fave is Grey Poupon even though I've tried organic ones...) and 1/2 tsp maple syrup.  I usually add chicken to this, but salmon would totally rock on this salad if you have some wild caught around.  Throw it altogether and enjoy!

Here is a salad I just made for breakfast:
  • On a bed of Romaine lettuce:  
  1. 1/2 of a mango, diced
  2. 1/4 cucumber, diced
  3. 2 green onions, sliced
  4. 1 Tbsp toasted raw pumpkin seeds
  5. 6 or 8 baby organic carrots
  6. 2 ounces smoked salmon
  • Dressing:
  1. 4 Tbsp Hot Chipotle Frontera salsa
  2. 1 Tbsp flax oil
  3. 3 drops Stevia
  4. Dash garlic powder
Chocolate Banana Nutbutter Smoothie

I hate being cold, but I love smoothies!  Anyway, here's a smoothie I make quite often:
  • In a blender put 8 oz of: 
    • UNSWEETENED almond or coconut milk ( going for low carb here, so think accordingly...) (use rice milk if you prefer, though it adds carbs)
    • 1 to 2 Tbsp UNSWEETENED dark cocoa powder
    • 1 FROZEN banana and 3 to 5 ice cubes (or a really ripe banana and add 1 cup of ice)
    • 1 Tbsp flaxmeal OR 2 tsp flax oil
    • 1 tsp pure vanilla extract
    • 1 serving Soluble Fiber (this is from my friend's company...it's such good stuff!)
    • 1 oz (28g) New Zealand whey powder (from Natural Grocers) (use your protein powder)
    • 1 tbsp natural peanut, almond, or homemade walnut butter (conventional PB has sugar and bad fats so go natural)
    • Stevia to taste (Stevia is a natural plant from the jungles of South America...it has not calories, but better than that, the Glycemic Index does not affect blood sugar levels!)
    • 1 scoop (approx 2 Tbsp) Perfect Food RAW by Garden of Life (or whatever green super food powder you use) 
    • Puree until smooth.  I always drink it thru a straw like I'm a little kid :)

  1. So Delish!! I use the super green powder too but add fish oil and I use raw dark honey instead of stevia.

    1. Nice! I take fish oil capsules b/c I can't stomach the taste ;) Jason hates the taste of Stevia, so I get it. Honey is yummy! Jason's grampa has honeybees on his farm so we always get raw unfiltered from him. Un-maze-ing! xoxox

  2. I buy this fancy schmancy fish oil - if there is such a thing, but it is in a pretty blue bottle and it is lemon flavored. Can't taste it in anything. I found I tasted more of the fishiness in the capsule! Funny! I'm with Jason, not a fan of the Stevia taste.... This is one of my favorite smoothies!! Post some more of your recipes for smoothies -- I am getting tired of the ones I make.... xoxoxo back at ya!!!
